Almond Crusted Halibut
Bob Geertz with our PWS
Halibut catch
This is one of our
favorite and is a very easy recipe.
Especially good on
Halibut that’s been in the freezer all winter and your avoiding cooking because
you know it will be dry.
1. Halibut fillet,
skin off.
2. Mayonnaise.
3. Lemon juice.
4. Slivered
Almond.
5. Progresso Bread
Crumbs
6. Parmesan cheese
ground
7. Pepper.
Spread Almonds on
cookie sheet and bake till golden brown, cool and chop.
Make a dry mix
with equal parts Almonds and bread crumbs, add ¼ Parmesan and some pepper.
Mix Mayonnaise
with a little Lemon juice, enough to coat the fish your using.
Cut the fish in to
portion sizes, coat with Mayonnaise mix and roll in Almond mix.
Place in backing
dish and bake uncovered at 350°f . Times vary from 12 to 20min. Cook till the
fish will flake easily, don’t over cook.
Do not serve with tartar
sauce!
